Meal Plan April 25-May 1, 2011

After a two week break, I am back.  I had prepared a paper meal plan for the past two weeks and just didn’t bother to transfer it to here.  There were some highlights that are worth repeating.    The spanish meatballs in the slow cooker from Everyday Food’s from the May issue was good, mildly spicy that even the kids enjoyed it.  The Beef and Beans casserole from Canadian Living May issue was excellent.  The kids did not like it, but it was great!  I noticed that it was heavy in calories, but it was also very hardy, I think the biscuit topping is the culprit there.

We are quickly approaching  the one year anniversary of the blog, so I thought I would highlight some of my favorite recipes that I have come across in the past year.  I think I will do the same next week as well, since the official anniversary is May 6th.  So stay tuned for an awesome Cinco De Mayo menu!  If you are planning ahead and would like to see what we had then here it is!  2010 Cinco De Mayo Menu Continue reading


Meal Plan January 10-16 2011

This week’s recipes are not for the lactose intolerant.  I have some holiday leftovers to get rid of, including the pounds I gained “testing” cookies.  We are going out for dinner this weekend, so not as many recipes to share.  Most of these recipes are from the latest two Chatelaine issues.

Lunch:  Pita pizza with Hummus
Dinner:  Butter chicken in the slow cooker , basmati rice, and saag paneer (this may be crazy, but I’m going to give it a try! from Jan Chatelaine)

Lunch:  leftover lasagna
Dinner:  Ravioli Lasagna from Chatelaine’s Feb 2011 cover, looks so yummy!, spinach salad

Lunch:  Grilled Cheese sandwiches
Dinner:  Tempeh with avocado, radichhio from Epicurious  (I am very excited to try this recipe, it looks like it may be alot of work, and since the BBQ is under a ton of snow, I will do it in the oven, fingers crossed that this actually works!  and leftovers for the kids, this is likely not going to be their favorite!)

Meal Plan January 3-9 2011

Wow that’s the first time I have had to write the date this year, so exciting!  Happy New Year!!!  After taking a few weeks off from posting here’s this weeks plan.  To start the week off, I took out a few protein items from the freezer to defrost for this week’s meals.  That way I don’t have to defrost in the micro saving both time and energy!  Two resolutions hit with one move!  In an attempt to be more organized I have found a lovely home for my camera, in the kitchen, so hopefully I will be able to take more pictures as the meals are prepared.  Also I got a new computer for Christmas, and I am still learning how to use it, so some things may not go as I planned, and to try and keep with another resolution, I will not be staying up past midnight, so I have 14 more minutes to get this post done, brush and floss my teeth and get to bed.  These resolutions are killing me already!  I think I hit six resolutions in this one post, there are still a few more if I could only fit in reading some books and not yelling at the kids into this post we should have them all covered!

This week we are just getting back into the routine of things, so I thought simple staple recipes were the plan.

Lunch:  Hot dogs and crudites
Dinner:  Roasted Cauliflower and Crispy Chicken and rice

Lunch:  Pasta with peas Grilled cheese sandwiches
Dinner:  Steak, Swiss chard and roasted eggplant parsnips and roasted garlic ceasar salad

Lunch:  Grilled Cheese sandwiches Oatmeal cinnamon pancakes
Dinner:  Eggplant Pasta Bake

Meal Plan October 4-11 Thanksgiving!

I love Thanksgiving and this weekend it’s finally here!

I extended the meal plan to include Monday, when the official holiday is. We are heading over to a neighbour’s house that day to celebrate with them, and we traditionally bring a squash dish. I have a great one for this year, I tested it out already.

Lunch: Chicken Noodle Soup
Dinner: Easy Cabbage Rolls

Lunch: Sandwiches at the Cross Country Meet
Dinner:  Tofu Tuesday, using Tempeh today, still searching, recipe to follow

Lunch: Grilled Cheese
Dinner: Salmon and Wild Lentil and Rice Salad

Lunch: Sweet Potato Quesadillas (it’s been almost a month since we had them!)
Dinner: Lasagna, Ceasar Salad, and Garlic Bread

Lunch: Leftover Lasagna
Dinner: Home made pizza

Lunch: Pasta with meatballs
Dinner: Chili

Lunch: leftovers
Dinner: Thanksgiving Dinner #1 (this is a menu from Williams Sonoma That I make every year, love it, many great recipes to come! Butternut Squash Soup, Brussel Sprouts, Three Fruit Stuffing, Pumpkin Pie)

Lunch: Turkey Sandwiches
Dinner: Thanksgiving Dinner #2  (Squash for our contribution)

Menu Plan September 13-19

This is week two of the school lunch rush. It’s getting better, but we may still be a bit of beginners luck. My trick for this week is to make lasagna and chili ahead of time, so we can have them for lunch. So far it’s working another goal for this week is to try and incorporate more legumes into our diet. Recipes for lasagna, chili and hummus to follow.

Here’s the menu for this week:

Lunch: Lasagna
Dinner: Lasagna (the kids had to have it again!)

Lunch: Sweet Potato Chili
Dinner: pizza

Lunch: Hummus with cut veggies
Dinner: Ratatouille and brown rice

Lunch: grilled cheese sandwiches
Dinner: Quinoa and Salmon

Lunch: Sweet Potato Chili
Dinner: Turkey Meatloaf and Steamed Veggies

Lunch: Pasta with leftover Ratatouille
Dinner: Braised Lamb Shanks, roasted carrots and potato gnochi (Bonnie Stern’s 100 mile diet menu)

Lunch: Leftovers
Dinner: Roast Chicken and veggies

Meal plan for September 6-12

The focus for this week’s menu are two things, school day lunches and getting through a couple recipes I need to test for Chatelaine Magazine. So it’s a busy week. I hope the lunches go well, the pressure is on!!!

Lunch and Dinner: at the CNE. Now some may be horrified at the thought but it turned out ok, I had butter chicken and rice with a veggie samosa for dinner and a Tiny Tom donut for dessert. Yes that was all that was left for me, one tiny donut!

Lunch. Sweet potato Quesadillas (yes this has become  a weekly staple, I even had if for breakfast today, while making it to pack for lunch)
Dinner: brown rice shrimp bowl

Lunch. Perogies with garlic spinach
Dinner: chicken pot pie

Lunch Pasta with veggies and sauce
Dinner. Tofu Thursday (recipe yet to be decided)

Lunch grilled cheese with broccoli
Dinner: homemade pizza if warm enough – grilled

Lunch: gels and gummies (last long run for this marathon)
Dinner: baked manicotti

Lunch: tour de greenbelt lunch
Dinner: sausages, kale soup
