Meal Plan December 5-11, 2011

Second week of December and it’s still pouring rain instead of snow, not making it look like Christmas yet.  Well at least I decided what I will be making for the cookie exchange.  Can’t say until the big reveal, but dare I say stay tuned.  This week all the recipes are basically from the lastest issue of Every Day Food from Martha, keeping it simple.

Monday
Lunch:  pizza for the phase two of birthday celebrations
Dinner:  Tofu and eggplant stew from Young Thailand’s cookbook – Simply Thai, jasmine rice

Tuesday
Lunch: Montreal Smoked Meat sandwiches on rye bread
Dinner:  chicken and lentil burger from EDF Dec’11 pg 68

Wednesday
Lunch:  grilled cheese sandwiches
Dinner:  halibut with warm bean hash from EDF Dec’11 pg 76

Thursday
Lunch:  sweet potato and black bean quesadillas
Dinner:  vegetable bean soup from EDF Dec’11 pg 80

Friday
Lunch:  out for lunch while celebrating a PD day, yipppeeee!!!
Dinner:   slow cooker chicken mole (requires me to find a store that carries ancho chiles or a good subsitute, would ancho chili powder do???) from EDF Dec’11 pg 43

Saturday
Lunch:  out for lunch during class (this is one of my favorite parts of taking an all day class)
Dinner:  out for dinner club

Sunday
Lunch:  leftovers
Dinner:  Sweet and Sour glazed chicken wings from EDF Dec’11 pg 57


Meal Plan November 28-December 4, 2011

And with this week we welcome in December.  My son’s birthday is the 4th, at which point there is exactly three weeks to Christmas.  Global warming has made this late fall feel like Christmas is months away.  Nice for trial running, but not for getting into the holiday spirit.  This week will change all that with the start of  holiday party season, starting with an office party, children’s party  and the aforementioned birthday party.   I also need to decide on what cookies I am going to make for my annual cookie exchange.

Monday
Lunch:  pancakes
Dinner:  Butternut squash, kale and black bean stew served with rice

Tuesday
Lunch: roast beef sandwiches
Dinner:  fish sticks and roast root vegetables, including cranberry or all red potatoes, even the flesh is red, very cool

Wednesday
Lunch:  grilled cheese sandwiches
Dinner:  turkey tacos

Thursday
Lunch:  pasta with cheese
Dinner:  lentil and turkey burgers

Friday
Lunch:  minestrone soup
Dinner: stove top mac and cheese prepared by the children!!!

Saturday
Lunch:  sushi from the grocery store (I”m in class!!!)
Dinner:  out for office holiday party

Sunday
Lunch:  sweet potato quesadillas
Dinner:  pizza party for  a wee birthday boy!


Meal Plan September 26-October 2, 2011

This week’s meal plan, including a little birthday party at the end of the week.  I am making  a chocolate cake with Dolphins coming out of it, we have passed the princess stage, and this party is an under water celebration.  To make this happen I am thinking of projecting a video of planet earth oceans onto the basement ceiling, we’ll see how that turns out.  Anyways, onto our meal plan….
Monday
Lunch:  cruduites and hummus and leftovers
Dinner:  Meatless monday Pinto Bean and Rice Buritos (from Real Simple)

Tuesday:
Lunch:  cheese and crackers and veggies and dip
Dinner:  Sweet Potato, Black Bean and Chicken Quesadillas

Wednesday
Lunch:  grilled cheese sandwiches (mine will be with tomato and pesto on rye bread)
Dinner:  chicken enchiladas (not assembled, but rather like a soft taco)

Thursday
Lunch:  leftover quesadilas
Dinner: sweet potato, spinach and egg hash

Friday
Lunch: tuna melts
Dinner:  Out for dinner, yippeee

Saturday
Lunch:  Pizza (to accompany the underwater themed birthday party)
Dinner:  Prime Rib Roast on the BBQ, fingerling potatoes, steamed broccoli

Sunday
Brunch:  french toast and this little gem sounds yummy – Baklava French Toast (from Closet cooking)
Dinner:  take out chinease to visti gramma, rescheduled from last week!


Meal Plan July 25-31, 2011

Here we are halfway through the week and the meal plan is finally getting up.  It’s been a week of not cooking much, lots of raw food and salads.  Just feeling a bit hot to cook.

Mediterranean Pasta Salad

Monday
Dinner: Quinoa Salad from the Canadian Living Blog (I used the Middle Eastern dressing) and Broccoli Slaw from Chatelaine I liked this recipe alot, it may be a nice use for the stems of broccoli that no one eats at my place, if only I was that organized!

Tuesday
Dinner:  Potato Salad and leftover quinoa salad.  This potato salad was really good, I halved the dressing and still thought it was a bit too much, I weighed the potatoes before peeling and they were close to the amount called for in the recipes, next time I would do at least 2.5lbs of potatoes for half the amount of dressing)

Meal Plan July 4-10, 2011

First full week of summer vacation, wish me luck!  I have such grand plans for summer vacation, from a luscious garden, to kids all skipping a grade from all the “bridge” work we will do over the summer, and of course training for another marathon and keeping the house in order.  yeah right!

Here’s this week’s menu, last week did not go to plan, and there are many recipes that I wanted to try that I am putting back into the meal plan for this week, in hopes that I will get to them.  I also picked up the latest issue of Food and Drink from the LCBO, and threw in some “weeknight” recipes from there.  Honestly there are many steps in most of those recipes, I am not easily intimidated in the kitchen, and I think they are too complicated for everyday!

Monday
Lunch:  leftovers and watermelon salad (this was so good, and we have tons of blueberries and watermelon in the house)
Dinner:  black bean and cheese tacos (from EDF June’11), swiss chard sauted with mushrooms

Tuesday
Lunch:  Ceasar Salad (this is my go to ceasar salad dressing, it keeps for a long time in the fridge, just take it out about 1/2 hour before you need it, I don’t make the rest of this recipe anymore)
Dinner:  grilled bok choy and grilled skirt steak gyros (also didnt’ get to this last week)

Meal Plan June 27-July 3, 2011

I was away for one night last week, and that’s all it took to go crazy at the magazine counter at Shopper’s. I have a serious love of magazines, and I picked up the latest copy of the FoodNetwork’s magazine. I really like it, I know it can all be found on line, but the way it’s presented is so much fun to browse.  So I have picked most of the meals this week from the July/Aug issue!

This is also the last week of school, Canada Day and my husband’s birthday, so we have much to celebrate!  Also, I am done with school time lunches, I can’t take anymore of them, we are having picnics in the park everyday this week except for the last day of school pizza/pool party!

Meal Plan June 20-26, 2011

Things are really winding down here, this week we are starting our regular summer routine, and hopefully this will free up some time to experiment in the kitchen, especially with the camera!

Monday:
Lunch:   leftovers (you may wonder how do you get leftovers from a weekend of camping, but we picked up some Swiss Chalet on the way home)
Dinner:  Meatless Monday Meal – Mediterranean Pasta Salad

Lunch:  sandwiches on the road on our way to a family hooky day
