Meal Plan May 2-8, 2011

Happy 1st anniversary Chop&Mix.

It’s hard to believe that we have made it to this milestone.  When this blog started out I had no idea where it was going to end up and I am really looking forward to what the next year will bring.

This week’s menu is a recap of more of my favorites over the year, and the much anticipated Cinco De Mayo meal plan.

Monday
Lunch:  leftovers
Dinner:  sundried tomato pesto pasta with spinach salad

Tuesday
Lunch:  Pasta
Dinner:  salmon with sundried tomato pesto, sweet potato fries, salad

Wednesday
Lunch:  grilled cheese
Dinner:  spaghetti bolognese

Thursday
Lunch:  leftovers
Dinner:  coleslaw and grilled tofu

Friday
Lunch:  leftovers
Dinner:  I know one day late, but the cinco de mayo meal is planned for today

Saturday
Lunch:  gels and gummies on the road, doing my last long long run before the big race
Dinner:  gnocchi and spinach salad

Sunday
Lunch:  Special mother’s day meal planned by my loving children!
Dinner:  Special mother’s day meal planned by my loving children!
