Meal Plan February 22-27, 2011

This is a short week, since I had included Monday in last week’s menu. We were supposed to have company for lunch, but unfortunately the plague that has struck our home, canceled those plans! But that did result in plenty of leftovers for this week. We had planned a fajita bar, and since the guests didn’t come, we have fajitas!!!

Lunch: chicken fajitas (I used the recipe from Cooking Closet, and it was awesome) and real refried beans (from Mark Bittman’s How to cook everything)
Dinner: chicken fajita pasta and sauteed Swiss Chard (I threw in about a cup of chickpeas too, this recipe is from Anna Olson’s Fresh)

Lunch: Steak Fajitas (used the recipe from Matt Dunigan, and this rub was really good, I marinated overnight, highly recommend!), Pasta leftovers
Dinner:  Vegetarian Singapore Noodles (Can Living March 2011), and I am throwing in some wilted collard greens

Lunch: Veggies and home-made Hummus (recipe to be posted soon, it’s good)
Dinner:  Slow cooker Spinach Ravioli Soup (Canadian Living)

Lunch: Pizza at school, and for Teacher appreciation day I am making Baked Ravioli from Chatelaine
Dinner:  parsnip and sweet potato fries and crispy chicken

Lunch:  out for lunch
Dinner:  Broiled Sweet and Sour Salmon (Everyday Food, March 2011)

Lunch:  sandwiches and leftovers
Dinner:  haven’t been found by anything yet, let’s see what inspires me! – I think I got inspired, Beef Bourguignon in the slow cooker haha~!  Thanks Chatelaine!
