Oatmeal cookies

This recipe is from Martha Stewart,  I found it in the summer issue of Everyday Food.  It seemed healthy, and I think it was trans fat free.  But it also sort of tasted healthy.  It wasn’t bad, but I think I like my cookies with butter.   SO I think I will skip this recipe, unless for some reason I need to bake without butter.

Healthier Oatmeal Cookies

1/2 c whole wheat flour
1/2 c all purpose flour
1 tsp baking powder
1/3 c vegetable oil
2/3 c packed dark brown sugar
1 egg
1tsp vanilla
1/2 rolled oats (not quick cooking)
1/2c raisins

Preheat oven to 350f
Mix the flour and baking powder
In another bowl mix oil, sugar and egg
Add in flour mixture, mix
Stir in oats and raisins
Make into 2tbsp sized balls, place onto a cookie sheet lined with parchment paper, 1.5″ apart
Bake for 15-17 min
Cool on sheet for 5min and then transfer to wire rack to cool completely
Store in air tight container for five days.
