Mediterranean Chopped Salad

I like to call this Mediterranean and not Greek Salad (that’s again homage to my Turkish roots), but either way it’s yummy.  There are many ingredients in this one,  but they don’t all have to be in the salad every time, use what is at hand.  Sadly, when I took this photo, we were out of garlic, and that folks is not an option! (but the kids liked it better that way)

Mediterranean Chopped Salad

  • 1 1/4  cups  cucumber , chopped  into 1/2 inch dice
  • 1  pint or 11/2 cups grape tomatoes ,  left whole, but purists may want to slice in half or quarter
  • 1     red pepper, chopped into 1/2 inch dice
  • 3     tablespoons extra virgin olive oil
  • 3     tablespoons red wine vinegar
  • 1     clove garlic minced in garlic press (about 1 teaspoon)
  • 1     can chickpeas , drained and rinsed
  • 1/2  cup chopped pitted olives
  • 1/4 cup  minced red onion
  • 1/2  cup roughly chopped fresh parsley
  • 3 cups  lettuce , cut into 1/2-inch pieces (optional)
  • 1 cup  feta cheese , chopped into 1/2-inch dice
  • Salt and freshly ground black pepper
  1. Chop ingredients
  2. Mix oil, vinegar and garlic together in salad bowl, add chopped stuff
  3. Toss with lettuce and feta, season with salt and pepper and serve

Voila!
