Caprese Salad

I love Caprese salad, so simple and yet so delicious.  The key to this salad is finding bocconcini that has a nice flavour.  I bought Saputo from the deli counter at Loblaws and compared it to the pearl sized ones in a tub (can’t rember the brand) and it was a world of difference, the deli one was so much better.

Caprese Salad

2 C        red grape tomatoes, halved
1 C        yellow heirlooms tomatoes, halved
1 C        bocconcini drained, depending on size cut into chunks
¼ C      basil leaves chopped (or if they are small enough left whole)
1 tsp     kosher salt
¼ tsp   freshly ground black pepper
2 tbsp  good quality balsamic
¼ C      extra virgin olive oil

1. Mix all the ingredients in a large glass bowl and enjoy both the taste and look!
